Ingredients
  

  • 1 lb 16 oz frozen edamame in pods (in-shell)
  • 3 tbsp neutral oil vegetable or canola
  • 4 cloves garlic minced (about 2 tbsp)
  • 1 tbsp fresh ginger minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce or hoisin for vegan
  • 1.5 tsp red chili flakes adjust spice
  • 1 tsp toasted sesame oil
  • 1 tsp honey or maple syrup
  • 2 tbsp water
  • 2 green onions sliced thin
  • 1 tsp sesame seeds toasted
  • Sea salt flakes to taste

Instructions
 

  • Boil Edamame Pods
  • Bring large pot of water to rolling boil. Add edamame pods. Cook 3-4 minutes until bright green.
  • Shock in Ice Water
  • Drain immediately. Plunge into ice water bowl 1 minute. Drain well. Pat dry with towel.
  • Prep Garlic and Ginger
  • While edamame cooks, mince garlic and ginger finely. Keep ready in small bowl.
  • Heat Oil in Skillet
  • Warm 3 tbsp neutral oil in large skillet over medium-high heat. Oil should shimmer.
  • Sauté Aromatics Fast
  • Add garlic and ginger. Stir-fry 30 seconds until fragrant. Don't let brown or burn.
  • Build Spicy Sauce
  • Add soy sauce, oyster sauce, chili flakes, honey, sesame oil, water. Stir 20 seconds.
  • Toss Edamame Thoroughly
  • Add drained edamame to skillet. Toss vigorously 1-2 minutes until evenly coated.
  • Season and Garnish
  • Sprinkle sea salt flakes. Toss once more. Remove from heat immediately.
