Ingredients
  

  • 2 Tbsp vegetable oil
  • 2 lbs ground beef 85% lean
  • 1 large onion chopped
  • 1 green bell pepper diced
  • 4 garlic cloves minced
  • 3 Tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 Tbsp Worcestershire sauce
  • 1 28 oz can crushed tomatoes
  • 2 15 oz cans kidney beans, drained
  • 1 15 oz cans cannellini beans, drained
  • 2 cups beef broth
  • Salt and pepper to taste
  • Shredded cheddar for serving

Instructions
 

Heat the Oil

  • Warm vegetable oil in Dutch oven over medium-high heat.

Brown the Beef

  • Add ground beef. Cook until browned, 8-10 minutes. Break up chunks.

Drain Excess Fat

  • Spoon out extra grease. Leave flavorful browned bits.

Add Vegetables

  • Stir in chopped onion, bell pepper, and garlic. Cook 5 minutes.

Add Worcestershire

  • Pour in Worcestershire sauce. Cook 2 more minutes until fragrant.

Toast Spices

  • Sprinkle chili powder, cumin, oregano. Stir 2 minutes to bloom.

Add Tomatoes

  • Pour crushed tomatoes with juice. Stir to combine everything.

Add Beans

  • Mix in kidney beans and cannellini beans. Stir gently.

Pour Broth

  • Add beef broth slowly. Bring to gentle simmer.

Season Base

  • Add salt and pepper. Taste and adjust seasoning.

Slow Simmer

  • Reduce heat to low. Cover partially. Simmer 60-90 minutes.

Serve Hot

  • Ladle into bowls. Top with cheddar cheese. Enjoy!
