Ingredients
  

  • 8 small flour or corn tortillas
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium tomatoes diced
  • 1/4 cup finely chopped red onion
  • 1 small jalapeño finely chopped
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon fresh lime juice
  • 1/2 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • Lime wedges for serving

Instructions
 

Prepare the Fresh Salsa

  • Add diced tomatoes, red onion, jalapeño and cilantro to a bowl. Pour in fresh lime juice and add a small pinch of salt. Stir gently until everything is combined. Set the salsa aside while you prepare the beef.

Cook the Onion and Garlic

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for two to three minutes. Add the minced garlic and stir for another thirty seconds. Keep the heat moderate to prevent burning.

Brown the Beef

  • Add the ground beef to the skillet with the softened onion. Break the beef apart using a wooden spoon. Cook until browned and no longer pink. Drain excess grease if needed, then return the beef to the skillet.

Season the Beef Filling

  • Sprinkle cumin, chili powder, paprika, salt and black pepper over the cooked beef. Stir everything thoroughly and cook for another two minutes. The spices should coat the beef evenly and create a warm, savory aroma.
