Ingredients

  • 1 lb ground beef 80/20 lean for flavor
  • 1 small yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp taco seasoning store-bought or homemade
  • 1/2 cup water
  • Salt and pepper to taste2 tostada shells flat corn tortillas, store-bought or baked
  • 1/4 cup nacho cheese sauce jarred or homemade
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 2 tbsp sour cream
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp mild salsa
  • Optional: Sliced black olives or jalapeños for heat

Instructions

Cook the Beef Filling

  • Heat a skillet over medium heat. Add ground beef and onion. Break up meat. Cook until browned, about 8 minutes. Drain excess fat.

Season the Beef

  • Stir in garlic, taco seasoning, and water. Simmer for 5 minutes. Beef should be saucy but not soupy. Taste and add salt. Set aside.

Warm the Cheese Sauce

  • Microwave nacho cheese sauce in a bowl for 30 seconds. Stir until smooth and pourable. Keep warm for stacking.

Prep the Toppings

  • Shred lettuce finely. Dice tomatoes fresh. Portion sour cream, salsa, and cheese. Have tostada shells ready on a plate.

Build the Bottom Layer

  • Spread 2 tbsp warm cheese sauce on one tostada shell. Add 1/4 of the beef mixture evenly. Sprinkle with 1 tbsp shredded cheese.

Stack the Crunch

  • Place second tostada shell on top. Press gently. This creates the signature crunch of how to make Taco Bell Stacker.

Add Fresh Toppings

  • Dollop sour cream on top. Spoon salsa over it. Scatter lettuce, tomatoes, and extra cheese. Repeat for all 4 stackers.

Serve Immediately

  • Cut stackers in half if needed. Enjoy hot and crispy. Dig in before the shells soften!

Notes

  • Use fresh tostadas for max crunch—bake store tortillas at 350°F for 5 mins if DIY.
  • Double cheese sauce for extra gooeyness; thin with milk if too thick.
  • Make it spicier: Add diced jalapeños to beef or hot sauce to salsa.
  • Vegetarian twist: Swap beef for seasoned black beans or plant-based crumbles.
  • Kid-friendly: Skip jalapeños, use mild cheese, and cut into smaller bites.
  • Meal prep hack: Cook beef ahead; assemble fresh to keep crisp.
  • Low-carb option: Use lettuce wraps instead of one tostada shell.
