Ingredients
  

  • 3 medium potatoes
  • 2 tablespoons oil
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon red chilli flakes
  • 1 tablespoon tomato ketchup
  • ½ teaspoon black pepper
  • 2 cloves garlic chopped
  • 1 small onion sliced
  • ½ cup water
  • Fresh spring onions for garnish

Instructions
 

Prepare the Potatoes

  • Wash and peel the potatoes carefully. Cut them into small cubes. Try to keep pieces equal in size. This helps them cook evenly. Boil them in water for 5–7 minutes until slightly soft but not mushy.

Fry the Potatoes

  • Heat oil in a pan on medium flame. Add boiled potato cubes. Fry them until light golden and slightly crispy. Remove and place on paper towel. This gives them a nice crunchy texture for the dish.

Prepare the Sauce Base

  • In the same pan, add chopped garlic and onions. Cook until soft and slightly golden. Add soy sauce, vinegar, ketchup, sugar, and water. Mix well until everything combines into a smooth sauce.

Add Spices and Flavor

  • Now add salt, black pepper, and red chilli flakes. Stir well so flavors mix properly. Taste the sauce and adjust sweetness or sourness. The balance of sweet and sour is very important for this recipe.

Combine Potatoes and Sauce

  • Add fried potatoes into the sauce. Mix gently so all pieces are coated. Cook for 3–5 minutes on low heat. This helps potatoes absorb the sweet and sour flavor completely.

Final Touch and Garnish

  • Turn off the heat and let it rest for a minute. Sprinkle fresh spring onions on top. Serve warm for best taste. The dish should look glossy and full of flavor.
