Ingredients
  

  • 2 tubes of Egg Tofu about 150g each.
  • 3 tablespoons of Cornstarch for coating.
  • 2 tablespoons of Cooking Oil.
  • 2 cloves of Garlic minced.
  • 1 tablespoon of Oyster Sauce.
  • 1 tablespoon of Light Soy Sauce.
  • 1 teaspoon of Sugar.
  • 1/2 cup of Water.
  • 1 stalk of Green Onion chopped for garnish.
  • A pinch of White Pepper.

Instructions
 

Slice and Prep the Tofu

  • Cut the egg tofu tubes into thick rounds. Make each slice about one inch thick. Carefully pat them dry with a paper towel. This helps the cornstarch stick better.

Coat with Cornstarch

  • Place cornstarch in a shallow bowl. Gently coat each piece of tofu in the flour. Shake off any extra powder. This creates a thin, crispy shell when frying.

Sear the Tofu

  • Heat oil in a non-stick pan over medium heat. Place the tofu slices in the pan. Fry until both sides are golden brown. Remove them and set aside.

Sauté the Aromatics

  • In the same pan, leave a little oil. Add the minced garlic and white parts of the green onion. Stir-fry until you smell a wonderful aroma. Do not burn the garlic.

Mix the Braising Sauce

  • In a small bowl, combine water, soy sauce, and oyster sauce. Add the sugar and whisk well. This sauce is the heart of the Egg Tofu Recipe.

Simmer and Thicken

  • Pour the sauce mixture into the pan with the garlic. Let it come to a gentle boil. The sauce will start to thicken and look glossy.

Combine and Serve

  • Slide the fried tofu back into the pan. Coat each piece gently with the thick sauce. Simmer for one minute. Garnish with fresh green onions and serve hot.
