- 8 cups beef or vegetable broth
- 4 cups water
- 1 piece kombu seaweed 4 inches
- 2 cloves garlic smashed
- 1- inch ginger sliced
- 1½ pounds thinly sliced beef ribeye or sirloin
- 2 cups napa cabbage chopped
- 1 cup spinach
- 1 cup mushrooms sliced
- 1 cup enoki mushrooms
- 1 cup bok choy
- 1 large carrot thinly sliced
- 1 block firm tofu cubed
- 2 green onions chopped
- 2 cups cooked rice
- Ponzu sauce
- Sesame dipping sauce
Prepare the Broth
Pour the broth and water into the pot. Add kombu, garlic, and ginger. Heat gently until it starts to simmer. Remove the kombu before boiling. Keep the broth warm throughout the meal for the best flavor.
Prepare the Ingredients
Wash all vegetables well. Slice them into bite-sized pieces. Arrange the beef, tofu, mushrooms, and vegetables neatly on serving plates. This makes cooking easy and keeps everything organized around the table.
Cook the Vegetables
Add vegetables, tofu, and mushrooms into the broth. Cook each ingredient until tender but not mushy. Different vegetables need different cooking times, so add them in small batches for the best results.
