Ingredients

  • 20 garlic cloves peeled
  • 1 cup mayonnaise full-fat for creaminess
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice 2 limes
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin powder
  • 1 small jalapeño seeded and chopped (optional for heat)
  • Fresh cilantro chopped (for garnish)

Instructions

Prep the Garlic

  • Peel all garlic cloves. Place in saucepan with olive oil. Cook on low heat for 8-10 minutes. Stir often. Garlic turns golden, not brown. This mellows the bite. Soft and sweet now.

Cool and Blend Base

  • Remove from heat. Let garlic cool 5 minutes. Add to blender with lime juice, salt, pepper, and cumin. Blend until smooth paste forms. Scrape sides. Takes 1 minute. Smooth base ready.

Add Creamy Elements

  • Add mayonnaise and sour cream to blender. Blend again for 30 seconds. Creamy texture appears. Taste it. Adjust salt if needed. Jalapeño goes in now for spice. Blend short bursts.

Check Consistency

  • Salsa should be thick but pourable. If too thick, add 1 tbsp water. Blend once more. Transfer to bowl. Garnish with cilantro. Chill 15 minutes. Flavors meld beautifully.

Serve It Up

  • Serve cold with chips or tacos. Drizzle on grilled meats. Keeps dippers coming back. Ready in minutes. Enjoy fresh!

Notes

  • Use low heat for garlic. Burns make it bitter.
  • Fresh lime boosts tang. Bottled lacks punch.
  • Make it vegan: Swap mayo and sour cream for plant-based.
  • Variation: Add roasted tomatoes for smoky salsa roja twist.
  • Spice lovers: Keep jalapeño seeds for fire.
  • Blend in avocado for extra creaminess.
  • Double garlic for bold fans. Start mild.
  • Thin with Greek yogurt for lighter dip.
