Ingredients
  

  • 1 package 17.3 oz frozen puff pastry, thawed
  • 1 cup fresh raspberries
  • 4 tablespoons raspberry preserves or jam
  • 4 ounces cream cheese softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg for egg wash
  • 1 tablespoon water
  • Powdered sugar for dusting optional

Instructions
 

Prepare the Oven and Pan

  • Preheat your oven to 400 degrees F. Line a large baking sheet with parchment paper to prevent sticking.

Mix the Cream Cheese Filling

  • In a medium bowl, blend the softened cream cheese, sugar and vanilla extract. Stir until the mixture is smooth.

Prepare the Puff Pastry

  • Unroll the thawed puff pastry onto a lightly floured surface. Cut each sheet into four equal squares using a knife.

Add the Cream Cheese

  • Place a spoonful of the cream cheese mixture into the center of each pastry square. Spread it out slightly.

Add Jam and Berries

  • Top the cream cheese with a small dollop of raspberry preserves. Place 3 or 4 fresh raspberries on top.

Fold the Pastry Edges

  • Fold two opposite corners of the square toward the center. Press them together firmly so they stay closed during baking.

Apply the Egg Wash

  • Whisk the egg and water in a small cup. Lightly brush the pastry dough with the mixture for a golden finish.

Bake Until Golden

  • Place the pan in the oven for 18 to 20 minutes. The pastries should be puffed and deep golden brown.

Cool and Dust

  • Move the pastries to a wire rack to cool for 10 minutes. Dust with powdered sugar if you like extra sweetness.

Notes

  • Store leftover pastries in an airtight container at room temperature for two days.
  • Keep them in the refrigerator for up to five days to stay fresh longer.
  • To get the crunch back, reheat them in a toaster oven for three minutes.
  • Avoid using the microwave as it can make the puff pastry feel very soggy.
