Ingredients
  

  • 2 pounds ground beef lean is best for a cleaner and healthier flavor
  • 1 medium yellow onion finely diced to add a sweet and savory base
  • 2 cloves garlic minced well for a warm and classic aromatic scent
  • 1 can 15 ounces pinto beans, rinsed and drained for extra protein
  • 1 can 10.5 ounces condensed cream of mushroom soup for a velvety sauce
  • ½ cup whole milk to thin the sauce and make it very creamy
  • 2 cups shredded sharp cheddar cheese for a salty and gooey melt
  • 1 tablespoon chili powder to add a very mild and smoky kick
  • 1 teaspoon dried oregano for a bit of earthy and herbal flavor
  • 1 bag 32 ounces frozen tater tots for a perfectly crispy top layer
  • Salt and black pepper to taste for seasoning the meat filling perfectly

Instructions
 

Brown the Beef

  • Place the ground beef in a large skillet over a medium-high heat on your stove. Cook until the meat is fully browned and use a spoon to break it into small pieces.

Sauté the Vegetables

  • Add the diced onions to the skillet with the beef and cook until they are very soft. Stir in the minced garlic and cook for one more minute until it smells wonderful.

Drain the Fat

  • Carefully drain the excess grease from the skillet using a colander or a large spoon. This keeps your casserole from being too oily and makes the flavors much more clean.

Season the Meat

  • Stir in the chili powder, dried oregano, salt, and black pepper into the beef mixture. Cook for two minutes so the spices can toast and release their full savory aroma.

Mix the Sauce

  • In a small bowl, whisk the condensed cream of mushroom soup with the whole milk. Pour this creamy mixture into the skillet with the beef and stir everything together well.

Add the Beans

Layer the Dish

Bake the Casserole
