Ingredients

  • 2 cups dried pinto beans
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 6 cups water or broth
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

Wash the Pinto Beans

  • Rinse the dried beans under cold water carefully. Remove any damaged beans or small stones before cooking them in the slow cooker.

Prepare the Vegetables

  • Chop the onion into small pieces. Mince the garlic finely so the flavor spreads evenly throughout the beans while cooking slowly.

Add Ingredients to Slow Cooker

  • Place beans, onion, garlic, ham hock and seasonings into the slow cooker. Pour water or broth over everything completely.

Stir the Mixture

  • Mix the ingredients gently using a wooden spoon. Make sure the seasonings spread evenly through the cooking liquid.

Cover and Cook Slowly

  • Place the lid on the slow cooker tightly. Cook on low heat for about 8 hours until the beans become soft and creamy.

Check Bean Texture

  • After cooking, check if the beans are tender. Add more broth if needed for a thinner texture.

Remove the Ham Hock

  • Carefully remove the ham hock from the cooker. Shred the meat and return it back into the beans.

Taste and Adjust Seasoning

  • Taste the beans carefully. Add extra salt, pepper or chili powder if you want stronger flavor.

Let Beans Rest Briefly

  • Turn off the slow cooker and let the beans rest for several minutes before serving. This helps the flavors settle nicely.

Garnish and Serve

  • Sprinkle fresh parsley on top before serving warm bowls of creamy pinto beans with your favorite sides.

Notes

  • Soak beans overnight for faster cooking
  • Use bacon instead of ham hock
  • Add jalapeños for spicy flavor
  • Use vegetable broth for vegetarian version
  • Add cumin for smoky taste
  • Mash some beans for creamier texture
  • Serve with shredded cheese on top
