  • 4 lbs ripe pears peeled, cored, chopped
  • 4 cups granulated sugar
  • 1/4 cup lemon juice fresh squeezed

  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1 pouch liquid pectin for quick set

Prep the Pears

  • Wash pears well under cool water. Peel each one carefully. Cut out the core. Chop into small chunks. This takes about 15 minutes. Place in a big bowl. Toss with lemon juice right away. It stops browning.

Mash for Texture

  • Use a potato masher in the bowl. Crush pears until chunky but not pureed. You want some texture. Add sugar now. Stir well to coat every piece. Let sit for 10 minutes. Sugar draws out juices.

Cook the Mixture

  • Pour everything into a large pot. Set heat to medium-high. Bring to a boil. Stir often with wooden spoon. Skim off any foam on top. This keeps it clear and pretty.

Add Spices and Pectin
