Ingredients

  • 3 lbs Russet potatoes peeled and sliced into thin rounds
  • 2 cups cooked ham diced into small cubes
  • 2 cups sharp cheddar cheese shredded
  • 1 medium yellow onion finely diced
  • 2 cups whole milk or heavy cream
  • 1 can 10.5 oz condensed cream of mushroom or chicken soup
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley chopped for garnish

Instructions

Preheat the Oven

  • Set your oven to 375°F (190°C) so it is hot. Grease your large baking dish with butter or non-stick cooking spray.

Prepare the Potatoes

  • Peel the potatoes and slice them into thin, even rounds. Keeping them thin helps them cook through and become very soft.

Make the Creamy Sauce

  • In a large bowl, whisk the milk, cream soup, and sour cream together. Add the garlic powder, paprika, salt, and black pepper.

Layer the Casserole

  • Place half of the sliced potatoes in the bottom of the dish. Scatter half of the diced ham and onions over the potatoes.

Add the Cheese

  • Sprinkle one cup of the shredded cheddar cheese over the first layer. This creates a gooey, cheesy center in your casserole.

Repeat the Layers

  • Add the remaining potatoes, ham, and onions on top. Make sure they are spread out evenly across the whole baking dish.

Pour the Sauce

  • Slowly pour the creamy milk mixture over the entire casserole. Give the dish a little shake to help the sauce sink down.

The First Bake

  • Cover the dish tightly with aluminum foil. Bake for 30 minutes to soften the potatoes without burning the top.

Add the Final Topping

  • Remove the foil and sprinkle the rest of the cheese on top. Bake uncovered for another 15 to 20 minutes until bubbly.

Rest and Garnish

  • Let the casserole sit for 10 minutes before serving. Sprinkle fresh parsley on top to make it look beautiful and bright.

Notes

  • Slice your potatoes using a mandoline for perfectly even cooking.
  • Use pepper jack cheese if you want a little spicy kick.
  • Add a cup of frozen peas or broccoli for extra color.
  • If you do not have ham, cooked bacon bits work great.
  • Use red potatoes with the skin on for a rustic look.
  • Sprinkle crushed butter crackers on top for an extra crunchy crust.
