Ingredients
  

  • 3-4 lb corned beef brisket with spice packet included
  • 1 large yellow onion peeled and quartered
  • 6 whole carrots peeled and cut into chunks
  • 1 small head green cabbage cut into wedges
  • 6-8 small red potatoes halved
  • 4 garlic cloves smashed
  • 1 bay leaf
  • 12 cups water or enough to cover meat
  • 1 tbsp mustard seeds optional, for extra kick
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Rinse and Prep the Brisket

  • Rinse the corned beef under cold water. Pat it dry with paper towels. Place it in a large pot. This removes excess salt. Takes just 2 minutes. Sets up juicy meat.

Add Aromatics and Water

  • Quarter the onion and smash garlic. Add them to the pot with bay leaf. Pour in 12 cups water. It should cover the brisket by 1 inch. Bring to a boil over high heat.
