Ingredients
  

  • 500 g bacon chopped
  • 2 large onions thinly sliced
  • 3 garlic cloves minced
  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tsp black pepper
  • 1/2 cup coffee strong brewed

Instructions
 

Cook Bacon

  • Chop bacon into pieces. Cook in skillet over medium heat. Stir until crispy, 10 mins.

Drain Fat

  • Remove bacon. Drain on paper towels. Keep 2 tbsp bacon fat in pan.

Caramelize Onions

  • Add sliced onions to fat. Cook low heat 20 mins. Stir until golden brown.

Add Garlic

  • Stir in minced garlic. Cook 2 mins. Fragrant aroma fills kitchen.

Sweeten Up

  • Add brown sugar, balsamic, maple syrup, coffee, pepper. Stir well. Simmer.

Return Bacon

  • Add cooked bacon back. Simmer 40 mins. Mixture thickens nicely.

Pulse and Cool

  • Cool slightly. Pulse in food processor until chunky. Jar it up.
