Ingredients
  

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup pineapple chunks
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon sliced green onions

Instructions
 

Prepare the Chicken

  • Pat the chicken thighs dry with paper towels. Trim any excess fat and cut larger pieces in half. Season both sides lightly with salt, black pepper and ground ginger.

Make the Pineapple Glaze

  • Add pineapple juice, soy sauce, honey, brown sugar, garlic and lemon juice to a bowl. Whisk everything until the sugar starts dissolving. Set the glaze aside while you prepare the chicken.

Brown the Chicken

  • Heat olive oil in a large skillet over medium heat. Add the seasoned chicken pieces. Cook for several minutes on each side until nicely browned and almost cooked through.

Add the Glaze

  • Pour the pineapple glaze over the browned chicken. Lower the heat slightly and let everything simmer gently. Turn the chicken occasionally so the sauce coats each piece evenly.

Add the Pineapple

  • Add the pineapple chunks to the skillet. Continue cooking until the chicken reaches 165°F internally. The pineapple should become warm and slightly tender without completely falling apart.

Thicken the Sauce

  • Mix cornstarch and water in a small bowl. Stir until smooth. Slowly add this mixture to the skillet. Simmer for two to three minutes until the glaze becomes thick and glossy.

Finish and Serve

  • Spoon the sticky glaze over the chicken before serving. Sprinkle fresh parsley and sliced green onions on top. Serve the chicken warm with rice, vegetables or your favorite simple side dish.
