Ingredients

  • 200 g fresh pennywort leaves Gotu Kola, stems removed
  • 4 cups filtered water chilled
  • 3 tablespoons honey or organic palm sugar
  • 1 tablespoon fresh lime juice
  • A tiny pinch of sea salt
  • Ice cubes for serving
  • Optional: 1 cup coconut water for extra sweetness

Instructions

Clean the Leaves

  • Place your fresh pennywort leaves in a large bowl of cold water and wash them very thoroughly today. These plants grow close to the ground, so you must remove all bits of dirt and tiny garden debris.

Rinse and Drain

  • Rinse the leaves a second time under running water to ensure they are perfectly clean and bright green. Shake off the excess water or use a salad spinner to dry the leaves before placing them in the blender.

Prep the Blender

  • Add the cleaned pennywort leaves into your high-speed blender along with two cups of the chilled filtered water. Using chilled water helps keep the green color vibrant and prevents the juice from heating up during the process.

Blend the Leaves

  • Turn the blender on high and pulse the leaves until they are completely pulverized and the liquid is dark green. It should take about one minute to reach a smooth consistency where no large leaf pieces are visible.

Strain the Juice

  • Pour the blended green liquid through a fine mesh strainer or a nut milk bag into a large pitcher. Squeeze the bag firmly with your hands to get every single drop of the nutrient-rich green juice out.

Add Remaining Water

  • Pour the remaining two cups of chilled water into the pitcher and stir the juice with a long spoon. You can adjust the thickness by adding a little more water if you prefer a lighter herbal taste today.

Sweeten the Drink

  • Stir in the honey or palm sugar until it is completely dissolved in the fresh green pennywort liquid. The sweetness helps balance the natural, slightly bitter, and earthy notes of the wild pennywort leaves very well.

Add Citrus Zing

  • Squeeze in the fresh lime juice and add a tiny pinch of sea salt to the large glass pitcher. The acid from the lime brightens the flavor and helps preserve the beautiful green color for a longer time.

Final Stir

  • Give the juice one final vigorous stir to make sure the honey and lime are perfectly mixed together today. Taste the juice and add more sweetener if you want it to be more like a sweet herbal lemonade.
  • If you love that kind of bright, citrusy refreshment, this chilled homemade lemonade with a clean tangy finish is another brilliant option to keep in your drink rotation.

Serve Cold

  • Fill your serving glasses with ice cubes and pour the fresh pennywort juice over them slowly and carefully. Garnish with a fresh pennywort leaf on top for a very professional and healthy look for your guests.

Notes

  • Always remove the long stems if they look thick, as they can make the juice taste very bitter.
  • Use coconut water instead of plain water to add a natural sweetness and many extra electrolytes today.
  • Add a small piece of fresh ginger to the blender for a spicy and very warming herbal kick.
  • If you find the taste too strong, mix it with fresh pineapple juice for a tropical and fruity twist — similar to the vibrant tropical flavors in this cold pineapple-based drink that is endlessly refreshing on a warm day.
  • Drink the juice immediately after blending to get the maximum amount of vitamins and fresh green enzymes.
  • You can add a few mint leaves to the blender for an extra cooling and very refreshing aroma — the same combination of mint and lime that makes a crisp cucumber mint drink so irresistible in the summer heat.
