Ingredients

  • 2 cups plain Greek yogurt
  • ½ cup creamy peanut butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries sliced
  • ¼ cup blueberries
  • 2 tablespoons chopped roasted peanuts
  • 1 tablespoon mini chocolate chips optional

Instructions

Prepare the Tray

  • Line a baking tray or flat plate with parchment paper. Make sure it fits inside your freezer. This helps the bark lift off easily after freezing and keeps the bottom smooth.

Mix the Yogurt Base

  • Place the Greek yogurt, peanut butter, honey, and vanilla extract into a large bowl. Stir well until smooth and creamy. Mix slowly so everything blends evenly without leaving peanut butter streaks.

Spread the Mixture

  • Pour the yogurt mixture onto the prepared tray. Spread it into an even layer using a spatula. Try to keep the thickness even so every piece freezes at the same rate.

Add the Toppings

  • Scatter the sliced strawberries, blueberries, chopped peanuts, and chocolate chips over the yogurt. Press the toppings gently into the surface so they stay in place while freezing.

Freeze Until Firm

  • Place the tray in the freezer for about three hours. The bark should become completely firm. Avoid moving the tray while freezing to keep the surface smooth and even.

Break and Serve

  • Remove the frozen bark from the tray. Break it into small pieces using your hands or cut with a sharp knife. Serve immediately and return leftovers to the freezer.

Notes

  • Use full-fat Greek yogurt for extra creaminess.
  • Natural peanut butter works well.
  • Add banana slices for extra sweetness.
  • Sprinkle shredded coconut on top.
  • Try almonds, pecans, or walnuts.
  • Drizzle melted dark chocolate before freezing.
  • Use raspberries instead of strawberries.
  • Store frozen until ready to eat.
