  • 1 sheet refrigerated puff pastry thawed
  • 8 ounces cream cheese softened
  • ⅓ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 medium fresh peaches
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour
  • 2 tablespoons apricot jam
  • 1 tablespoon water
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon powdered sugar for serving

Instructions
 

Prepare the Peaches

  • Wash the peaches thoroughly and pat them dry. Remove the pits and slice the peaches thinly. Place them in a bowl with lemon juice and gently toss them to prevent browning.

Prepare the Pastry

  • Lightly flour your work surface and unfold the thawed puff pastry. Roll it gently if needed. Cut twelve pastry circles that fit comfortably inside the muffin cups.

Prepare the Muffin Tin

  • Lightly grease the muffin tin with butter or cooking spray. Place one pastry circle into each cup. Press the pastry gently against the bottom and sides without tearing it.

Make the Cream Cheese Filling

  • Add softened cream cheese and sugar to a mixing bowl. Beat until smooth and creamy. Add the egg yolk and vanilla, then mix again until everything is evenly combined.

Fill the Pastry Cups

Add the Peaches

Add the Cinnamon

Cool and Glaze
