Ingredients
  

  • 1 whole chicken cut into medium pieces
  • 3 tablespoons yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons cooking oil
  • 1 large onion sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 tomatoes chopped
  • 2 green chilies sliced
  • 1 teaspoon red chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 1 cup water
  • Fresh coriander for garnish

Instructions
 

Marinate the Chicken

  • Wash the chicken pieces well and pat them dry. Mix yogurt, lemon juice, salt, chili powder, and black pepper in a bowl. Coat the chicken completely. Let it rest for at least 30 minutes for better flavor and tenderness.

Prepare the Mud Pot

  • Soak the mud pot in water for about 10 minutes before cooking. This helps prevent cracks during heating. Dry the outside carefully and place the pot on low heat to warm slowly and evenly.

Cook the Onions and Spices

  • Heat oil in a frying pan. Add sliced onions and cook until golden brown. Stir in ginger paste and garlic paste. Cook for one minute. Add turmeric, cumin, coriander powder, and chopped tomatoes for rich flavor.

Add the Chicken

  • Place the marinated chicken into the pan. Stir gently so every piece gets coated with the spicy mixture. Cook for about 10 minutes until the chicken changes color and releases delicious aroma from the spices.

Transfer to the Mud Pot

  • Carefully move the chicken mixture into the warm mud pot. Add green chilies and one cup water. Cover with the lid tightly. Let it cook slowly on low heat for around 35 minutes until tender.

Finish the Roast

  • Sprinkle garam masala over the chicken during the final minutes. Let the gravy thicken naturally. Garnish with fresh coriander before serving. The chicken should look juicy, rich and slightly roasted around the edges.
