Ingredients
  

  • 4 boneless chicken thighs or breasts, 1.5 lbs total
  • 1 cup pineapple juice fresh or canned
  • ¼ cup soy sauce low-sodium
  • 3 tablespoons brown sugar
  • 2 garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • 1 cup fresh pineapple chunks
  • 2 green onions sliced (for garnish)
  • 1 tablespoon cornstarch for glaze thickening
  • 2 tablespoons water for slurry

Instructions
 

Make the Marinade

  • Mix pineapple juice, soy sauce, brown sugar, garlic, ginger, lime juice, sesame oil and pepper in a bowl. Whisk until sugar dissolves. Taste it. Add more lime if needed. This tangy mix is key to flavor.

Marinate the Chicken

  • Add chicken thighs to the bowl. Coat well with marinade. Cover and chill for 1 hour. Flip halfway. Longer marinate means more flavor. Up to 4 hours is great. Don't skip this step.

Prep the Glaze

  • Pour marinade into a small pot. Bring to boil over medium heat. Mix cornstarch and water for slurry. Stir into pot. Simmer 3-5 minutes until thick. Set aside. This shiny glaze makes it restaurant-style.

Cook the Chicken

  • Heat grill pan or outdoor grill to medium-high. Oil lightly. Grill chicken 6-7 minutes per side. Baste with glaze last 2 minutes each side. Chicken reaches 165°F inside. Juicy and charred perfectly.
