Ingredients
  

  • 8 ounces thinly sliced shabu shabu beef
  • 4 cups water
  • 3 tablespoons white miso paste
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 small garlic clove minced
  • 1 sheet dried kombu
  • 1 tablespoon sesame seeds
  • 1 teaspoon neutral cooking oil
  • 1 small carrot thinly sliced
  • 1/2 cup firm tofu cubed

Instructions
 

Prepare the Beef

  • Preheat your oven to 425°F. Line a baking sheet with parchment paper. Arrange the thin beef slices in one layer. Lightly brush them with cooking oil for better browning.

Roast the Shabu Shabu Beef

  • Roast the beef for about 6 to 8 minutes. Turn the slices halfway through cooking. Watch carefully because thin beef cooks quickly. Remove it when the edges become lightly browned and crisp.

Start the Broth

  • Pour the water into a medium soup pot. Add the kombu and ginger. Warm the mixture over medium heat. Remove the kombu before the water reaches a strong boil.

Add the Vegetables

  • Add the mushrooms and sliced carrot to the warm broth. Simmer them for about five minutes. They should become tender but still keep some pleasant texture.

Add Tofu and Spinach

  • Add the tofu cubes and baby spinach. Stir gently so the tofu stays intact. Cook for another two minutes, until the spinach becomes soft and bright green.

Mix in the Miso

  • Place the miso paste in a small bowl. Add a little warm broth and whisk until smooth. Stir the mixture into the pot. Avoid boiling the soup after adding miso.

Season the Soup

  • Add soy sauce and sesame oil. Taste the broth carefully. Add a little more miso if needed. Keep the flavor balanced, savory and gentle rather than overly salty.

Add the Roasted Beef

  • Slice the roasted beef into smaller pieces if needed. Add it to serving bowls. Ladle the hot miso soup over the beef. Finish with sliced green onions and sesame seeds.
