Ingredients

  • 8 oz Stilton cheese crumbled (or strong blue cheese)
  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp fresh chives finely chopped
  • 1 garlic clove minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt optional
  • 2 tbsp chopped walnuts for topping
  • Fresh apple slices or crackers for serving

Instructions

Soften the Cream Cheese

  • Place cream cheese in a bowl. Let it sit at room temp for 15 mins. Or microwave 10 seconds. Beat until smooth and fluffy. This base makes dip creamy. No lumps here.

Crumble the Stilton Cheese

  • Break Stilton into small chunks by hand. Some veins are good. They add flavor bursts. Mix into cream cheese gently. Mash together with a fork. Blend until mostly smooth.

Add Wet Ingredients

  • Stir in sour cream and mayonnaise. Mix well until silky. Add Worcestershire sauce and garlic. Beat 1 minute. Taste. Adjust pepper. Bold tang builds now.

Fold in Fresh Herbs

  • Chop chives fine. Stir them in last. Keeps green color bright. Mix lightly. Don't overdo. Dip stays chunky and fresh. Spoon into serving bowl.

Chill and Top

  • Cover with plastic. Chill 30 mins. Flavors marry. Before serving, sprinkle walnuts. Press lightly. Garnish with extra chives. Ready to scoop!

Notes

  • Room temp ingredients blend best. No gritty bits.
  • Strong Stilton shines. Use Danish blue if milder.
  • Make ahead: Flavors deepen overnight.
  • Spicy kick: Add dash of hot sauce.
  • Vegan: Swap for cashew cheese and vegan mayo.
  • Fruit twist: Mix in dried cranberries.
  • Nut-free: Top with pomegranate seeds.
  • Thicker dip: Reduce sour cream slightly.
