Ingredients
  

  • 500 g plain flour all-purpose
  • 1 tsp bicarbonate of soda baking soda
  • 1 tsp salt
  • 400 ml buttermilk
  • 2 tbsp rolled oats for topping
  • Optional: 1 tsp sugar for slight sweetness

Instructions
 

Preheat Oven

  • Heat oven to 200°C (400°F). Line baking sheet with parchment. This prevents sticking.

Mix Dry Ingredients

  • In large bowl, combine flour, baking soda, salt. Stir well with wooden spoon. Make a well in center.

Add Buttermilk

  • Pour buttermilk into well. Mix quickly with spoon. Dough forms sticky ball. Don't overmix.

Shape the Loaf

  • Turn dough onto floured surface. Gently shape into round 20cm circle. About 5cm thick.

Score and Bake

  • Place on sheet. Cut deep cross on top. Sprinkle oats. Bake 35 minutes until golden. Tap sounds hollow.

Notes

  • Use fresh buttermilk for best rise.
  • Add cheese and herbs for savory version.
  • Swap half flour for wholemeal.
  • Make mini loaves for quicker bake.
  • Brush with milk for shiny crust.
  • Add seeds like sunflower on top.
