Ingredients

  • 2 cups self-rising flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp mustard powder
  • 1/4 tsp cayenne pepper
  • 4 tbsp cold butter cubed
  • 1 cup grated sharp cheddar cheese
  • 3/4 cup milk plus extra for brushing
  • 1 egg for egg wash, optional

Instructions

Preheat and Prep

  • Heat oven to 425°F (220°C). Line baking sheet with parchment. Grate cheese. Cube cold butter. This quick prep makes perfect scones every time.

Mix Dry Ingredients

  • In large bowl, sift flour, baking powder, salt, mustard powder, and cayenne. Whisk well. These spices give cheesy kick without heat.

Cut in Butter

  • Add cold butter cubes to flour mix. Rub with fingers or pastry cutter until like breadcrumbs. Keep it crumbly for flaky texture.

Add Cheese and Milk

  • Stir in grated cheddar. Make a well in center. Pour in milk. Mix gently with fork until dough forms. Don't overmix.

Shape the Dough

  • Turn dough onto floured surface. Pat gently to 1-inch thick. Use 2-inch cutter to cut rounds. Re-pat scraps once.

Arrange and Brush

  • Place scones on baking sheet, close together. Brush tops with milk or egg wash. This gives golden shine.

Bake to Perfection

  • Bake 10-12 minutes until golden. Cool on rack 5 minutes. Serve warm. Pull apart easily!

Notes

  • Use very cold butter for flakier scones.
  • Don't knead dough—handle gently.
  • Add chopped chives for onion flavor.
  • Swap cheddar for parmesan or gouda.
  • Make mini scones for parties.
  • Freeze unbaked scones for fresh baking later.
  • Add bacon bits for meaty twist.
