Ingredients
  

  • 1.5 kg Floury potatoes like King Edward or Maris Piper
  • 2 large white onions finely sliced
  • 50 g unsalted butter
  • 250 g mature cheddar cheese grated
  • 100 ml whole milk
  • 1 teaspoon English mustard
  • 2 large tomatoes sliced (for the topping)
  • Salt and freshly ground black pepper to taste
  • A pinch of paprika for extra color

Instructions
 

Boil the Potatoes

  • Peel the potatoes and cut them into large, even chunks. Boil them in salted water for 15 to 20 minutes until they are very soft.

Sauté the Onions

  • While the potatoes boil, melt half the butter in your frying pan. Cook the sliced onions slowly until they are soft, sweet, and golden brown.

Mash the Potatoes

  • Drain the potatoes well and return them to the warm saucepan. Mash them thoroughly until they are completely smooth and have no lumps at all.

Mix with Dairy

  • Add the remaining butter and the milk to the warm mashed potatoes. Stir well until the mixture looks creamy, light, and very fluffy.

Add the Flavor

  • Stir in the English mustard and plenty of salt and black pepper. The mustard helps bring out the sharp flavor of the cheddar cheese.

Fold in the Cheese

  • Reserve a small handful of cheese for the top of the pie. Fold the rest of the grated cheese into the warm potato and onion mixture.

Prepare the Dish

  • Preheat your oven to 200°C (180°C fan). Spoon the cheesy potato mixture into your ovenproof baking dish and smooth the top.

Create the Topping

  • Arrange the sliced tomatoes on top of the potato mixture in a pretty pattern. Sprinkle the remaining cheese and a pinch of paprika over everything.

Bake the Pie

  • Place the dish in the center of the oven for 25 to 30 minutes. The top should be bubbling, golden, and very crispy.

Rest and Serve

  • Let the pie sit for five minutes before serving it to your family. This helps the cheese set so you can cut perfect, tidy slices.
