Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg separated
  • 2 tbsp melted butter
  • 1 tbsp chopped chives
  • 4 oz cream cheese
  • 4 oz smoked salmon
  • Fresh dill sprigs
  • Lemon wedges

Instructions

Mix Dry Ingredients

  • Sift flour, baking powder, salt into bowl. Whisk smooth. Removes lumps. Takes 1 minute. Perfect base ready.

Prepare Wet Mix

  • Whisk egg yolk, milk, melted butter together. Add chopped chives. Creates flavor base. Light and fragrant.

Combine Batter

  • Pour wet into dry. Whisk gently until smooth. Thick pouring cream consistency. Let rest 10 minutes. Better texture.

Whip Egg Whites

  • Clean bowl, dry completely. Beat egg white stiff peaks. Shiny soft mountains form. Lightens blinis perfectly.

Fold Gently

  • Spoon egg whites into batter. Fold carefully. Keep air bubbles. Ribbon trail when lifted. Ready to cook.

Cook Blinis

  • Heat non-stick pan medium-low. Add oil drop. Spoon 1 tbsp batter per blini. Bubbles form, flip. Golden both sides.

Notes

  • Rest batter 10 minutes minimum.
  • Low heat prevents burning.
  • Don't overmix egg whites.
  • Variation: Sweet blinis with sugar.
  • Add lemon zest to batter.
  • Freeze cooked blinis.
  • Keep warm in low oven.
  • Crepe pan works best.
