Ingredients

  • 500 g beef chunks
  • 2 tablespoons oil
  • 1 large onion chopped
  • 2 carrots sliced
  • 2 garlic cloves minced
  • 2 tablespoons flour
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

Brown the Beef

  • Heat oil in a large pot over medium heat. Add beef pieces and cook until brown on all sides. This step locks in flavor. Do not rush this part. Remove beef and set aside.

Cook the Vegetables

  • In the same pot, add onions and carrots. Cook for about five minutes until soft. Stir gently to avoid burning. Add garlic and cook for one more minute until fragrant.

Add Flour and Mix

  • Sprinkle flour over the vegetables. Stir well to coat everything evenly. This helps thicken the sauce later. Cook for one minute to remove raw flour taste.

Add Liquid and Flavor

  • Pour in beef stock slowly while stirring. Add tomato paste, thyme, bay leaf, salt and pepper. Mix everything well. The sauce will begin to come together nicely.

Simmer the Casserole

  • Return the beef to the pot. Cover and cook on low heat for about 90 minutes. Stir occasionally. The beef will become soft and tender. The sauce will thicken beautifully.

Notes

  • Use good quality beef for best taste
  • Cook slowly for tender meat
  • Add potatoes for a complete meal
  • Use mushrooms for extra flavor
  • Replace thyme with rosemary if preferred
  • Add a splash of red wine for deeper taste
