  • 175 g plain flour
  • 75 g cold butter cubed
  • 1 tablespoon icing sugar
  • 1 large egg yolk
  • 150 g raspberry jam
  • 125 g butter softened
  • 125 g caster sugar
  • 125 g ground almonds
  • 1 large egg beaten
  • 1/2 teaspoon almond extract
  • 25 g flaked almonds

Instructions
 

Make the Pastry

  • Mix the flour, cold butter and icing sugar in a bowl until it looks like breadcrumbs. Add your egg yolk and a little water to form a firm dough. Chill for fifteen minutes.

Roll and Blind Bake

  • Roll out your dough and line the tart tin carefully with it. Prick the bottom with a fork and bake at 200°C for ten minutes until it is lightly golden today.

Add the Jam

  • Spread the raspberry jam evenly over the base of your baked pastry shell. This jam layer provides a sweet and tangy contrast to the nutty almond sponge that you will add next today.
