Ingredients
  

  • 2 cups mixed green and black olives pitted
  • 6 ounces fresh Pecorino cheese
  • ¼ cup extra virgin olive oil
  • 2 garlic cloves thinly sliced
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon freshly ground black pepper
  • 1 small orange finely zested
  • 1 tablespoon fresh parsley chopped

Instructions
 

Prepare the Olives

  • Drain the olives well before starting. Remove any remaining pits and place the olives in a clean bowl. Pat them gently with paper towels if they contain excess liquid.

Warm the Olive Oil

  • Pour olive oil into a small saucepan over low heat. Add sliced garlic, rosemary, thyme and red pepper flakes. Warm everything gently for two minutes without allowing the garlic to brown.

Add the Citrus Flavors

  • Turn off the heat and add lemon zest, orange zest, lemon juice and black pepper. Stir gently to combine. The warm oil will help release the wonderful flavors from the herbs and citrus.

Marinate the Olives
