Ingredients

  • 1 package instant vanilla pudding mix 5.1 ounces
  • 3 cups cold whole milk
  • 1 can sweetened condensed milk 14 ounces
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 box vanilla wafers about 11 ounces
  • 5 ripe but firm bananas
  • 1 tablespoon lemon juice

Instructions

Prepare the Pudding Mixture

  • Add the instant pudding mix and cold milk to a large bowl. Whisk for about two minutes until thick. Add condensed milk and vanilla extract. Whisk again until everything becomes smooth and creamy.

Whip the Cream

  • Pour cold heavy cream into another mixing bowl. Add powdered sugar and beat with an electric mixer. Continue until soft peaks form. Avoid overmixing, as the cream can become grainy.

Combine the Cream and Pudding

  • Add the whipped cream to the chilled pudding mixture. Fold gently with a rubber spatula. Use slow movements to keep the mixture light and fluffy. Do not stir too aggressively.

Prepare the Bananas

  • Peel the bananas and slice them into even rounds. Toss them gently with lemon juice. This helps slow browning and keeps the slices looking fresh inside your dessert.

Start the First Layer

  • Arrange vanilla wafers across the bottom of your baking dish. Add a layer of banana slices over the cookies. Spread some creamy pudding mixture evenly over the bananas.

Build the Dessert Layers

  • Repeat the layers with vanilla wafers, bananas, and pudding. Continue until the ingredients are used. Finish with a generous layer of pudding. Smooth the top gently with a spatula.

Add the Final Topping

  • Place a few vanilla wafers and banana slices over the top. You can arrange them around the edges for a pretty presentation. Keep the topping simple and rustic.

Chill Before Serving

  • Cover the dish tightly with plastic wrap. Refrigerate for at least four hours. Overnight chilling gives the wafers time to soften and allows the flavors to come together beautifully.

Notes

  • Use ripe bananas with yellow skins and only a few brown spots.
  • Choose firm bananas so they hold their shape.
  • Use cold milk for a smoother pudding mixture.
  • Chill the mixing bowl before whipping the cream.
  • Fold whipped cream gently to keep the pudding light.
  • Do not skip the chilling time.
  • Add a little cinnamon for extra warmth.
  • Use chocolate wafers for a chocolate-banana version.
