  • 2 medium zucchini diced

  • 1 cup chopped cauliflower
  • 1 cup chopped spinach
  • 6 cups low-sodium chicken broth
  • 1 cup diced tomatoes no added sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Prepare the Chicken

  • Trim the chicken breasts and remove any unwanted fat. Cut them into small, even pieces. Smaller pieces cook quickly and make the soup easier to portion for meal prep.

Prepare the Vegetables
