Ingredients
  

  • 16 ounces 450g Mascarpone cheese, room temperature
  • 1 cup 240ml Heavy whipping cream
  • 1/2 cup 100g Granulated sugar
  • 1/2 cup 120ml Limoncello liqueur
  • 1/2 cup 120ml Freshly squeezed lemon juice
  • 1/2 cup 120ml Water
  • 24 Ladyfinger cookies Savoiardi
  • Zest of 2 large lemons
  • Fresh mint leaves for garnish

Instructions
 

Make the Lemon Syrup

  • In a shallow bowl, mix the water, lemon juice, and half of the Limoncello. Add two tablespoons of sugar and stir well until dissolved. This liquid will flavor your cookies.

Whip the Cream

  • In a large bowl, whip the heavy cream until stiff peaks form. Be careful not to over-whip it into butter. The cream should be thick and hold its shape perfectly.

Prepare the Mascarpone

  • In another bowl, beat the mascarpone, remaining sugar, remaining Limoncello, and half of the lemon zest. Mix until smooth and creamy. Do not rush this step, as lumps are not ideal.

Combine the Mixture

  • Gently fold the whipped cream into the mascarpone mixture using a spatula. Do this in two parts to keep the mixture light. The goal is a fluffy, airy, lemon-scented cream.

Soak the Ladyfingers

  • Dip each ladyfinger into the lemon syrup for two seconds only. If you soak them too long, they will become mushy. They should be damp but still hold their shape.

Layer the Tiramisu

  • Place a layer of soaked cookies at the bottom of your dish. Spread half of the creamy mixture over the cookies. Repeat this with the second layer of cookies and cream.

Chill and Serve

  • Cover the dish with plastic wrap. Place it in the fridge for at least four hours. This allows the flavors to blend. Garnish with remaining zest and mint before serving.

Notes

  • Use high-quality Limoncello for the best taste. The better the liqueur, the better your dessert will be.
  • If you want a non-alcoholic version, replace the liqueur with more lemon juice and a little honey.
  • Add fresh berries like raspberries on top. They look beautiful and add a nice tart contrast to the sweet cream.
  • Use fresh, organic lemons to avoid pesticides on the zest. The zest provides the most important lemon aroma.
  • Make sure your mascarpone is at room temperature. Cold mascarpone is hard to mix and can cause the cream to become lumpy.
