Ingredients
  

  • 1 cup fresh lime juice about 8-10 limes
  • 1 cup granulated white sugar
  • Zest of 4 limes finely grated
  • 1/2 cup water
  • 1 tsp lime extract optional, for extra punch
  • Pinch of salt

Instructions
 

Zest the Limes

  • Wash limes well. Grate green zest only. Avoid white bitter pith. Use fine grater. Collect 2 tbsp zest. Takes 2 minutes. Smells amazing already.

Juice the Limes

  • Cut limes in half. Juice into measuring cup. Get 1 cup juice. Strain out pulp and seeds. Fresh juice makes best flavor.

Combine Ingredients

  • In saucepan, mix sugar, water, lime juice, zest, and salt. Stir over medium heat. Sugar dissolves fast. No crystals left.

Simmer to Thicken

  • Bring to gentle boil. Reduce to simmer. Cook 8-10 minutes. Stir often. Syrup thickens slightly. Coats spoon nicely.

Cool and Strain

  • Remove from heat. Cool 10 minutes. Strain through fine mesh into clean bottle. Discard zest bits. Clear golden syrup.

Store and Chill

  • Seal bottle tight. Refrigerate immediately. Ready to use. Flavor improves next day.

  • Roll limes on counter before juicing. Gets more juice out.
  • Use caster sugar for faster dissolve.
