- 6 cups crisp lettuce chopped
- 1 small cucumber thinly sliced
- 1 medium tomato chopped
- ¼ small red onion thinly sliced
- 2 tablespoons fresh parsley chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- ½ teaspoon Dijon mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Make the Lemon Dressing
Add olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt and black pepper. Whisk everything until smooth and slightly creamy. Taste the dressing and adjust the lemon or salt if needed.
Combine the Salad
Place the lettuce, cucumber, tomato, red onion and parsley into a large bowl. Toss them gently with clean salad tongs. Avoid pressing the vegetables, as this can make the lettuce lose its crisp texture.
- Dry the lettuce completely before adding the dressing.
- Use fresh lemon juice for the brightest flavor.
- Chill the vegetables before assembling the salad.
- Add dressing shortly before serving.
- Use romaine lettuce for extra crunch.
- Add shredded carrots for natural sweetness.
- Include avocado for a creamy texture.
- Add feta cheese for a salty, creamy finish.
- Sprinkle toasted seeds for extra crunch.
- Add grilled chicken to make the salad more filling.
- Replace honey with maple syrup if preferred.
- Add a pinch of chili flakes for gentle heat.
