Prepare the Potatoes

  • Peel the potatoes and cut them into even chunks. This helps them cook evenly. Place them in cold water to remove extra starch. It makes them crispier later.

Parboil the Potatoes

  • Boil potatoes in salted water for about 10 minutes. They should be slightly soft on the edges. Do not overcook them. Drain well and let them steam dry.

Rough Them Up
