  • 1.5 kg cherry tomatoes halved
  • 4 garlic cloves minced
  • 1/4 cup fresh basil leaves chopped
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp balsamic vinegar

Instructions
 

Preheat Oven

  • Set oven to 200°C. Line baking sheet with parchment. Easy start.

Prep Tomatoes

  • Halve cherry tomatoes. Place cut-side up on sheet. Even rows.

Season Well

  • Drizzle olive oil over tomatoes. Sprinkle garlic, salt, pepper. Toss gently.

Roast First

  • Bake 20 mins. Tomatoes soften and release juices. Smells heavenly.

Add Basil

  • Remove from oven. Drizzle balsamic vinegar. Scatter fresh basil. Mix lightly.

Final Roast

  • Return to oven 5 mins more. Basil wilts perfectly. Golden edges form.
