Ingredients

  • 1/4 pound 1 stick unsalted butter at room temperature.
  • 4 ounces good quality blue cheese Roquefort is great.
  • 1 1/4 cups all-purpose flour.
  • 1/2 teaspoon kosher salt.
  • 1/2 teaspoon freshly ground black pepper.
  • 1/2 cup chopped walnuts or pecans.

Instructions

Cream the Butter and Cheese

  • Place the softened butter and blue cheese into your mixer bowl. Beat them together on medium speed until the mixture is smooth. This usually takes about one minute of mixing.

Add the Dry Ingredients

  • Turn the mixer to low speed so flour doesn't fly everywhere. Add the salt, pepper and all-purpose flour slowly. Mix just until the dough starts to come together in clumps.

Fold in the Crunchy Nuts

  • Add your chopped walnuts to the dough mixture. Use a spatula or the mixer on low to distribute them. The nuts add a wonderful texture to every single bite.

Shape the Dough Log

  • Dump the dough onto a floured surface. Roll it into a log about 8 inches long. The log should be roughly 1 1/2 inches in diameter.

Chill the Cracker Dough

  • Wrap the log tightly in plastic wrap. Place it in the refrigerator for at least 30 minutes. Chilling makes the dough much easier to slice into clean circles.

Preheat Your Oven

  • Set your oven to 350 degrees Fahrenheit while the dough rests. Line your baking sheets with parchment paper. This prevents the crackers from sticking to the metal pans.

Slice the Crackers

  • Remove the log from the fridge and unwrap it. Use a sharp knife to cut slices 3/8-inch thick. You should get about 30 individual crackers from one log.

Bake Until Golden

  • Place the slices on the prepared baking sheets. Bake for 20 to 22 minutes until they turn golden brown. They will smell amazing as the butter toasts.

Cool and Serve

  • Let the crackers rest on the pan for five minutes. Move them to a wire rack to cool completely. Serve them at room temperature for the best flavor.

Notes

  • Use Room Temp Butter: Ensure your butter is soft so it blends perfectly with the cheese.
  • Pick Good Cheese: Use a blue cheese you enjoy eating plain for the best results.
  • Try Different Nuts: Use pecans or hazelnuts if you do not like walnuts.
  • Add Some Heat: Mix in a pinch of cayenne pepper for a spicy kick.
  • Make it Herbaceous: Add a teaspoon of fresh thyme or rosemary to the dough.
  • Check the Flour: Do not over-mix the dough or the crackers will be tough.
