Hawaiian Pineapple Cake Recipe
Livy Lane
This Hawaiian Pineapple Cake Recipe is soft, sweet and full of tropical flavor. It is one of my favorite desserts to bake at home. The cake feels light but rich at the same time.

- 2 cups all-purpose flour
- 1 ½ cups sugar
- 2 eggs
- 1 can crushed pineapple with juice, 20 oz
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts optional
Mix the Wet Ingredients
In a large bowl, add eggs, sugar, and crushed pineapple with juice. Mix well using a whisk or mixer. The mixture should look smooth and slightly thick.
Add Dry Ingredients
Now add flour, baking soda, and salt into the wet mixture. Stir gently until everything combines well. Do not overmix, or the cake may become dense.
Prepare the Topping
In a pan, melt butter on low heat. Add sugar and evaporated milk. Stir continuously until smooth and slightly thick. Add coconut and vanilla.
Mix well. If you love rich, buttery dessert toppings, you might enjoy browsing other indulgent butter-forward sweet treats on the site — the same principle of simple ingredients creating deep flavor is at work there too.
- Use fresh pineapple for a stronger flavor
- Add cream cheese frosting for a richer taste
- Replace walnuts with pecans or skip nuts entirely
- Do not drain pineapple juice; it adds moisture
- Bake in cupcake molds for mini portions
- Add a pinch of cinnamon for a warm twist
- If you want to try another no-fuss pineapple dessert with a creamy, airy texture, this whipped pineapple and pistachio salad is a wonderful companion recipe — it uses similar tropical flavors with almost no baking required
