Ingredients
  

  • 500 g chestnut mushrooms finely chopped
  • 200 g cooked chestnuts crumbled
  • 2 large onions diced
  • 2 garlic cloves minced
  • 200 g fresh spinach chopped
  • 100 g walnuts chopped
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tsp dried thyme

Instructions
 

Prepare the Mushroom Base

  • Heat olive oil in a large pan over medium heat. Add diced onions and minced garlic. Cook for 5 minutes until soft and golden. Stir in chopped mushrooms. Cook for 10 minutes until they release water and brown nicely. Season with salt, pepper, and thyme. This builds deep flavor fast.

Make the Nutty Filling

  • Add crumbled chestnuts and chopped walnuts to the pan. Stir well for 3 minutes. Pour in soy sauce for umami kick. Mix in chopped spinach. Cook until wilted, about 2 minutes. Taste and adjust seasoning. Let the mixture cool for 10 minutes. It needs to chill before wrapping.

Roll Out the Pastry

  • Preheat oven to 200°C (400°F). Line a baking tray with parchment paper. Unroll puff pastry on a floured surface. Roll it gently to a 30x40cm rectangle. Keep it thin but sturdy. This ensures a crisp outside.

Assemble the Wellington

  • Spoon cooled filling along the middle of the pastry. Leave space at ends for folding. Brush edges with plant-based milk. Fold pastry over filling like a parcel. Seal tightly. Flip seam-side down on the tray. Score top lightly with a knife for pretty lines.

Bake to Golden Perfection

  • Brush top with more plant-based milk. Sprinkle sesame seeds if you like crunch. Bake for 30-35 minutes until pastry is puffed and golden. Let it rest 5 minutes before slicing. The smell will make everyone hungry!
