Ingredients
  

  • 500 g lean ground turkey breast or thigh mix
  • 1 small onion very finely chopped
  • 1 small crisp apple peeled and grated
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • 1 tablespoon tomato purée
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil for cooking
  • Wholemeal burger buns and fresh salad for serving

Prepare the Fresh Ingredients

  • Start by peeling and grating your small apple. Finely chop the onion and mince the garlic clove. Grating the apple is a secret trick to keep the turkey moist.

Mix the Burger Base

  • Place the ground turkey into a large mixing bowl. Add the grated apple, chopped onion, and minced garlic. Use your clean hands or a large spoon to combine them.

Add Herbs and Seasoning

  • Sprinkle in the fresh parsley, dried oregano, and tomato purée. Add a good pinch of salt and black pepper. Mix thoroughly so the flavor is even in every bite.

Shape the Turkey Patties

  • Divide the meat mixture into four equal portions. Roll them into balls and then flatten them into discs. Make sure they are about 2cm thick for even cooking.

Chill the Patties

  • Place the shaped patties on a plate and cover them. Put them in the fridge for at least 10 minutes. This helps the burgers stay together while they are cooking.

Heat the Frying Pan

  • Heat the olive oil in a large non-stick pan over medium heat. Wait until the oil is hot before adding the burgers. This creates a nice golden crust.

Cook Until Golden Brown

  • Fry the burgers for about 5 to 6 minutes on each side. Ensure they are cooked all the way through until no pink remains. Use a spatula to flip them carefully.

Rest and Assemble
