  • 100 g cold butter cubed
  • 1 egg yolk
  • 2-3 tbsp cold water
  • Pinch of salt200g smoked bacon chopped
  • 150 g grated cheddar cheese
  • 4 large eggs
  • 200 ml double cream
  • 100 ml milk
  • 1 small onion finely chopped
  • Salt and pepper to taste
  • 1 tsp mustard optional

Instructions

Make the Pastry Dough

  • Mix flour and salt in a bowl. Rub in cold butter until it looks like breadcrumbs. Add egg yolk and water. Knead gently into a ball. Wrap and chill for 15 minutes. This keeps it flaky.

Roll Out the Pastry

  • Dust your surface with flour. Roll dough to fit your pie dish. About 1/4 inch thick. Gently lift into the dish. Press edges. Trim extras. Prick base with a fork. Chill again for 10 minutes.

Blind Bake the Pastry

  • Preheat oven to 190°C (375°F). Line pastry with baking paper. Fill with beans or rice. Bake 15 minutes. Remove paper and beans. Bake 5 more minutes until pale gold. Let it cool a bit.

Cook the Bacon and Onion

  • Heat a frying pan over medium heat. Add chopped bacon. Cook until crispy, about 5 minutes. Add onion. Fry until soft and golden. Drain fat. Spread evenly in the pastry case. Sprinkle cheese on top.

Prepare the Custard Filling

  • In a bowl, whisk eggs, cream, milk, mustard, salt, and pepper. Whisk until smooth. No lumps. Pour slowly over bacon and cheese. It should fill to the top.

Bake the Quiche

  • Lower oven to 160°C (320°F). Bake quiche for 25-30 minutes. Edges should be set, center slightly wobbly. Cool 10 minutes before slicing. Golden and perfect!
