Ingredients
  

  • 1.5 kg pork belly skin scored
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 2 tbsp fennel seeds
  • 1 tbsp sea salt flakes
  • 1 tsp black pepper
  • 2 onions sliced thick
  • 300 ml apple cider vinegar
  • Fresh thyme sprigs handful

Instructions
 

Prep the Pork

  • Pat pork belly dry with paper towels. Score skin in diamond pattern. Rub with salt and oil. Let it sit 30 mins.

Make the Spice Rub

  • Mix garlic, fennel seeds, pepper, and thyme in a bowl. Rub all over pork, under skin too. Press firmly.

Layer the Tray

  • Preheat oven to 160°C. Place sliced onions in tray base. Add pork belly on top, skin up.

Slow Roast First

  • Pour cider vinegar around pork. Cover with foil tightly. Roast 2 hours until tender.

Crisp the Skin

  • Remove foil. Turn oven to 220°C. Roast 30-40 mins more. Skin turns crispy golden.

Rest and Serve

  • Take out pork. Rest 10 mins. Slice thick. Spoon pan juices over top.

Notes

  • Dry skin well for max crunch—pat twice if needed.
  • Use a meat thermometer; aim for 75°C inside.
  • No cider? Swap with chicken stock.
  • Spicy twist: Add chili flakes to rub.
  • Veggie version: Try with tofu, same steps.
  • Faster cook: Pressure cooker for 45 mins first.
