Ingredients
  

  • 2.5 kg pork belly skin on (boned).
  • 1 kg pork loin boneless.
  • 4 garlic cloves minced.
  • 3 tbsp fresh rosemary chopped.
  • 2 tbsp fresh sage chopped.
  • 2 tbsp fennel seeds crushed.
  • Zest of 2 lemons.
  • 2 tsp sea salt.
  • 1 tsp black pepper.
  • 4 tbsp olive oil.
  • 200 ml white wine for basting.

Instructions
 

Prepare the Pork Belly

  • Lay pork belly skin-side down on a board. Score meat lightly. This helps flavors soak in.

Make the Herb Paste

  • Mix garlic, rosemary, sage, fennel, lemon zest, salt, pepper, and olive oil. Stir into a paste.

Season the Pork Loin

  • Rub half the herb paste over pork loin. Set aside for flavors to blend.

Spread Paste on Belly

  • Spread remaining paste evenly on pork belly meat. Press gently with hands.

Roll the Porchetta

  • Place pork loin in center of belly. Roll tightly from one end. Keep skin outside.

Tie It Securely

  • Use kitchen twine to tie rolls every 5 cm. Make knots firm but not too tight.

Score the Skin

  • Turn roll skin-side up. Score skin in diamond pattern. Rub with salt. Pat dry.

Rest Overnight

  • Wrap in cling film. Chill overnight. This dries skin for crisp crackling.

Preheat and Roast Low

  • Next day, preheat oven to 150°C. Place porchetta in roasting tin. Roast 3 hours.

Increase Heat for Crisp

  • Turn oven to 220°C. Roast 30 more mins. Skin turns golden and crunchy.

Baste with Wine

  • Pour white wine over halfway. This keeps meat juicy. Check temp hits 70°C inside.

Rest Before Slicing

  • Remove from oven. Tent with foil. Rest 30 mins. Slice thin for serving.
