  • 1 bay leaf.

  • 1 celery stick chopped.
  • 1 liter vegetable stock.
  • 50 g butter.
  • Salt and pepper to taste.
  • 1 tsp mustard optional.

Instructions
 

Rinse the Peas

  • Put split peas in colander. Rinse under cold water. Remove any bits.

Chop Vegetables

  • Dice onion, carrot, and celery. Keep pieces small for even cooking.

Prepare Ham Hock

  • If using hock, place in saucepan. Add peas and bay leaf.

Add Stock and Veggies

  • Pour in vegetable stock. Add onion, carrot, celery. Bring to boil.

Simmer Gently

  • Reduce heat. Cover and simmer 1.5 hours. Stir now and then.

Check Peas Softness

  • Peas should mash easily. Add water if too thick.

Remove Ham Hock

  • Take out hock. Shred meat. Discard bone and bay leaf.

Blend the Mixture

  • Use hand blender. Puree until smooth. Or mash by hand.

Stir in Butter and Ham

  • Add butter, shredded ham, mustard. Mix well. Season with salt, pepper.

Heat Through
