Ingredients

  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 2 bay leaves
  • Salt and pepper
  • 200 g long-grain rice
  • 500 ml chicken stock

Instructions
 

Prep the Chicken

  • Cut chicken thighs into bite-sized pieces. Remove excess fat. Season with salt and pepper. Heat 1 tbsp oil in large frying pan. Fry chicken 3-4 minutes until golden. Don't cook through. Remove to plate. Builds flavor base.

Cook the Chorizo

  • Add chorizo slices to same pan. Fry 1-2 minutes until oil releases. Rich red color appears. Remove with chicken. Save flavorful oil. Don't wipe pan clean. This step adds smoky depth everyone loves.

Sauté the Veggies
