Ingredients
  

  • 10 oz 300g halloumi cheese, sliced 1/2-inch thick
  • 2 medium zucchini sliced
  • 2 bell peppers red/yellow, chunked
  • 1 large red onion wedged
  • 1 lb 450g baby potatoes, halved
  • 3 tbsp olive oil
  • 4 garlic cloves minced
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preheat and Prep Veggies

  • Heat oven to 425°F (220°C). Wash and chop zucchini, peppers, onion, potatoes. Place in large bowl. Drizzle 2 tbsp oil. Toss well. Even coating key.

Season the Veggies

  • Add minced garlic, oregano, paprika, cumin, salt, pepper. Squeeze half lemon juice. Mix thoroughly. Spread on baking tray in single layer. Room to roast crisp.

First Roast

  • Bake veggies 20 minutes. Stir halfway. Edges caramelize nicely. Potatoes soften. Aromas fill kitchen. Your mouth waters already.

Add Halloumi
