Ingredients
  

  • 6 medium apples Granny Smith or Honeycrisp, peeled, cored, quartered
  • 3/4 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 sheet puff pastry store-bought, thawed or homemade: 1 1/4 cups flour, 1/2 cup cold butter, 1/3 cup cold water, pinch salt
  • 1 egg for egg wash
  • Vanilla ice cream or whipped cream
  • Powdered sugar for dusting

Instructions
 

Prepare the Apples

  • Peel, core, and quarter the apples. Toss them in a bowl with a splash of lemon juice to prevent browning. Set aside. This keeps them fresh and pretty. Takes just 5 minutes.

Make the Caramel

  • Heat sugar in the skillet over medium heat. Stir until it melts into golden caramel – about 5 minutes. Do not burn it! Add butter, vanilla, and salt. Swirl to mix smooth and bubbly. Remove from heat.

Arrange Apples in Pan

  • Place apple quarters cut-side up in the hot caramel. Pack tightly in a circle pattern. They should fill the pan snugly. Cook on low heat for 5 minutes. Apples soften and soak up caramel goodness.

Prep and Add Pastry

  • Roll out puff pastry to fit pan with 1-inch overhang. Cut a small vent hole in center. Lay gently over apples. Tuck edges down sides with a spoon. Brush top with beaten egg for shine.

Bake the Tarte

  • Preheat oven to 375°F (190°C). Bake for 25-30 minutes until pastry is golden and puffed. Check at 20 minutes. Let cool in pan for 10 minutes. Caramel sets nicely.

Invert and Serve

  • Run a knife around edges. Place serving plate over pan. Flip quickly but carefully. Lift pan off. Adjust any stuck apples. Dust with powdered sugar. Slice warm.
