Ingredients
  

  • 500 g potatoes peeled and diced.
  • 1 tin 340g corned beef, chopped.
  • 1 large onion finely chopped.
  • 2 tbsp vegetable oil or butter.
  • 1 tsp Worcestershire sauce.
  • Salt and black pepper to taste.
  • 2 eggs optional, for frying.
  • Fresh parsley chopped (for garnish).
  • 100 g frozen peas optional boost.

Instructions
 

Prepare the Potatoes

  • Boil diced potatoes in salted water. Cook until tender, about 10 minutes. Drain well. Mash lightly – keep some chunks for texture.

Chop the Veggies and Beef

  • Finely chop the onion. Cube the corned beef into bite-size pieces. This makes even cooking easy.

Heat the Pan

  • Warm oil or butter in a large frying pan. Medium heat works best. Let it get hot but not smoking.

Cook the Onions

  • Add chopped onions to the pan. Fry until soft and golden, about 5 minutes. Stir often to avoid burning.

Add the Corned Beef

Flip and Crisp Other Side

Fry Eggs (Optional)
