Ingredients
  

  • 800 g braising steak cut into 2cm chunks
  • 2 tablespoons vegetable oil
  • 2 large onions finely chopped
  • 3 cloves of garlic minced
  • 2 red bell peppers diced
  • 2 fresh red chillies finely chopped
  • 1 tablespoon chili powder mild or hot
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 400 g can chopped tomatoes
  • 400 ml beef stock
  • 2 tablespoons tomato purée
  • 400 g can kidney beans drained and rinsed
  • 1 teaspoon dried oregano
  • 1 small piece of dark chocolate optional
  • Salt and black pepper to taste

Instructions
 

Brown the Steak

  • Heat the oil in your large pot over high heat. Brown the beef chunks in batches until they have a dark, crispy crust on all sides.

Sauté the Onions

  • Remove the beef and set it aside on a plate. Lower the heat and cook the onions until they are soft and golden brown.

Add Peppers and Garlic

  • Toss the diced peppers, garlic, and fresh chillies into the pot. Stir them well and cook for five minutes until the vegetables soften nicely.

Stir in the Spices

  • Add the chili powder, cumin, and smoked paprika to the vegetables. Fry for two minutes to let the spices toast and release their spicy oils.

Add Tomato Purée

  • Stir in the tomato purée and cook for one minute. This step helps to thicken the sauce and adds a rich, savory depth.

Combine the Liquids

  • Pour in the chopped tomatoes and the beef stock. Use your spoon to scrape any tasty brown bits off the bottom of the pot.

Return the Beef

  • Place the browned steak and any juices back into the pot. Ensure the meat is mostly covered by the tomato and stock liquid.

The Long Simmer
